This is a real nice sailplane flight simulator (~$50) with a two week free demo period and online download. It has dozens of free scenery modules and a high detail Norway module (~$125). It allows a pilot with programming skills to create his own aircraft with his own choice of airfoils. You can also create your own scenery modules. I think you could build a hang glider but I'm not sure what the difficulty level would be. It offers a wide choice of sailplanes - and even a primary glider! - with full instrumentation and controls. You can record your flights. You can also go online with other players and fly together and text message in real time using the Silent Wings multiplayer server. It installs on Windows, Linux or Mac. I easily installed the Windows version on a multi-core Xeon workstation with a Nvidia Quatro 4000 at 1920x1080 and it screams. But if you don't know how to work lift, you'll end up landing out.
